Cajun Shrimp and Grits

Ingredients

  • 1 package @allvegetarianinc vegan shrimp
  • 5 oz of @noevilfoods vegan chorizo chopped
  • 1/3 cup red bell pepper ( i used jarred roasted red peppers)
  • 2 green onions sliced (greens reserved for garnish)
  • 2 cloves of garlic minced
  • 2 1/2 tbsp of vegan butter
  • 3 tbsp of water
  • 1 tsp of @spicemode cajun seasoning
  • 1 tsp of old bay seasoning
  • salt & pepper to taste
  • creamy grits
  • 1 cup organic corn grits
  • 2 cups of broth or water
  • 2 cups of plant milk ( i use oat milk)
  • 1/3 cup @followyourheart vegan cheddar cheese shreds
  • 1 tbsp of vegan butter
  • salt & pepper to taste

Preparation

  1. In a large pot bring the water and milk to a soft boil

  2. Add in the corn grits and stir well to ensure no lumps form

  3. Lower the heat and simmer for 25 -30 minutes

  4. Add in the cheddar cheese, butter, salt & pepper

  5. Stir occasionally until the cheese has melted

  6. Cover and keep warm until the shrimp are ready

  7. In a skillet, sauté the chorizo and 1/2 tbsp of butter until crisp

  8. Remove and set aside

  9. In the same pan, melt 2 tbsp of butter on med low heat

  10. Add in the garlic and cook until fragrant

  11. Add the shrimp, cajun and old bay seasonings, mix then cover and continue to cook for 5-8 minutes

  12. Add in the chopped red pepper, the white parts of the green onions and the water and continue to cook on med low for another 5 minutes

  13. Add the cooked chorizo back to the shrimp and mix well

  14. Serve the shrimp & chorizo mixture over a bowl of the grits and garnish with green onions
