Garlic & Lemon Ovenbaked Fish
Ingredients
- 6-8 pieces of white fish (ideally cod/haddock)
- 60g butter
- 6-8 garlic cloves, finely sliced
- 3 tbsp plain flour
- 1/2 litre milk
- Water as needed
- 1 tsp English mustard
- 3/4 tsp salt
- Handful of fresh chopped parsley
- Juice of one lemon
Preparation
Melt butter in a pan and add the sliced garlic. Keep the flame low to infuse the butter with the garlic taste. Add plain flour to create a roux.
Gradually add milk to the roux, ensuring it is absorbed into the flour and butter before adding more. If the white sauce seems too thick, add some extra water to thin it out. Stir in salt, mustard, lemon juice, and chopped parsley. Taste and adjust seasoning if necessary.
Place the pieces of white fish in a baking dish or cast iron skillet. Pour the sauce over the fish, ensuring the pieces are coated. Cook at gas mark 6 (200°C, 392°F) for 15-20 minutes or until the fish is cooked through.
