No-Cook Vegan Cauliflower Ceviche
Ingredients
- 4 cups riced cauliflower
- 6 limes
- 3-4 tomatoes
- 1/2 white onion
- 1-2 fresh jalapeños
- 2 medium avocados
- Salt and garlic powder to taste

You will need a large mixing bowl and a cheese grater
Instructions
Grate the cauliflower head to get about 4 cups of riced cauliflower
In a large mixing bowl, combine the cauliflower, tomato, onion, and jalapeño, and mix well
Juice the 6 limes and add the lime juice to the mixing bowl
Place the mixture in the refrigerator for at least 2 hours
Dice the avocado and add it to the ceviche. Serve on tostadas or with tortilla chips
