Power Salad for Busy Days and Picnics

Ingredients

  • 2 Avocados
  • 2 Sweet Potatoes
  • 2 Handfuls of fresh spinach or other greens (kale works well)
  • 2 Tomatoes
  • 6 tablespoons Lemon juice
  • Olive Oil
  • 1 Splash white wine vinegar
  • Salt, Rosemary, and other spices to taste

Preparation

  1. Cut sweet potato into small pieces

  2. Marinate with olive oil, rosemary, and salt

  3. Bake in the oven for 25 minutes at 200 degrees with circulating air

  4. Cut one avocado into slices and put it in a bowl with the salad

  5. Cut the tomatoes and add them to the bowl

  6. Smash the other avocado and mix with oil, vinegar, lemon juice, salt, and other spices to make avocado dressing

  7. Combine all ingredients together

  8. Note: This salad tastes best when the sweet potato is still warm, but it also works well when cold and is great for picnics
