Quick & Flavorful Shrimp Scampi Pasta
Ingredients
- 4 garlic cloves
- 1 lb shrimp
- 2 tsp chili flakes
- Juice of 1 lemon
- 1/2 cup parsley
- 1/2 cup white wine or broth
- 3 tbsp vegan butter or butter
- 1 lb spaghetti or linguini
Preparation
Cook the spaghetti or linguini until al dente, then reserve 1/4 cup of pasta water.
In a pan, sauté minced garlic and chili flakes in 2 tbsp olive oil and 2 tbsp butter (or vegan butter), stirring to prevent burning.
Pat the shrimp dry and season with salt and pepper.
Add the shrimp to the pan and fry for 2 minutes on each side. Remove and set aside.
Pour in 1/2 cup of white wine or broth and lemon juice, bringing it to a simmer.
Stir in another tbsp of butter (or vegan butter) and reduce the heat.
Return the shrimp to the pan, add diced parsley, and incorporate the cooked noodles.
Toss quickly using tongs and introduce the reserved pasta water to achieve your desired consistency.
Serve with cracked black pepper, extra chili flakes, and parsley.
