Spicy Fish Bake
Ingredients
- 600 - 700g white fish fillets
- 1 - 2 tbsp butter
- 1 large onion, diced
- 7 cloves of garlic, finely chopped/minced
- 1 tsp salt
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika
- 1/2 tsp chilli powder
- 1 can of chopped tomatoes
- 2 tomatoes diced
- 2 peppers sliced
- 1/2 tsp garlic powder
- 1/2 tsp mixed herbs
- 1/2 tsp chilli powder
Preparation
Defrost the fish fillets and pat dry on paper towel, arrange in an ovenproof dish and leave to one side
To a wide frying pan add butter, once melted add the diced onion, garlic + salt, saute for a few minutes
Next add the ground spices, again fry for 2 - 3 mins
Next add a can of chopped tomatoes, cook covered for 5 minutes
Finally add the diced tomatoes + sliced peppers, cook for 3 - 4 mins
Pour this cooked sauce over the fish arranged in the dish
Mix 2 cups of homemade breadcrumbs with 1/2 tsp each garlic powder, mixed herbs + chilli powder
Sprinkle the mixture over the fish + sauce and bake in a hot oven at gas mark 6, 200°c or 185°c (fan oven) for 20 - 25 mins
Serve immediately with your favourite sides, spiced roast potato wedges go really well with this, enjoy!
