Spicy Fish Bake

Ingredients

  • 600 - 700g white fish fillets
  • 1 - 2 tbsp butter
  • 1 large onion, diced
  • 7 cloves of garlic, finely chopped/minced
  • 1 tsp salt
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 1/2 tsp chilli powder
  • 1 can of chopped tomatoes
  • 2 tomatoes diced
  • 2 peppers sliced
  • 1/2 tsp garlic powder
  • 1/2 tsp mixed herbs
  • 1/2 tsp chilli powder

Preparation

  1. Defrost the fish fillets and pat dry on paper towel, arrange in an ovenproof dish and leave to one side

  2. To a wide frying pan add butter, once melted add the diced onion, garlic + salt, saute for a few minutes

  3. Next add the ground spices, again fry for 2 - 3 mins

  4. Next add a can of chopped tomatoes, cook covered for 5 minutes

  5. Finally add the diced tomatoes + sliced peppers, cook for 3 - 4 mins

  6. Pour this cooked sauce over the fish arranged in the dish

  7. Mix 2 cups of homemade breadcrumbs with 1/2 tsp each garlic powder, mixed herbs + chilli powder

  8. Sprinkle the mixture over the fish + sauce and bake in a hot oven at gas mark 6, 200°c or 185°c (fan oven) for 20 - 25 mins

  9. Serve immediately with your favourite sides, spiced roast potato wedges go really well with this, enjoy!
