Tuna Croquettes W/ Herby Dip
Ingredients
- 4 medium potato’s, peeled & boiled until soft
- 500g canned tuna drained well or fresh tuna poached lightly until flakes easy
- 1 medium onion diced ultra fine.
- 1 tsp. dried garlic granules.
- 1 tsp. sea salt.
- 1 tbsp. chopped fresh herbs (i used dill & chives).
- 2 tsp curry powder
- 1-2 tbsp. coconut flour (if needed)
- Olive oil to spray
Preparation
Mash tuna & potato well
Next combine onion, garlic, salt, spices & herbs
Add the eggs & mix well with hands until the mixture leaves the side of the bowl. At this point, only if the mix feels to wet, add the coconut flour
Make the mixture in finger shape patties, mine were about 10cm x 3cm
Place Almond Parmesan or flour on a plate, roll each croquette to cover. Place on a flat plate, cover & leave to set in the fridge for 1 hr
Heat a large pan on medium - high heat, spray the pan (or lightly coat in olive oil), place the croquettes on the pan & spray the upper side also
Cook each side for a few minutes until golden brown
Serve warm with fresh cos lettuce leaves & garlic dipping sauce
