Blue Overnight Chia Pudding with Nicecream

Ingredients

Chia pudding

  • 1 cup unsweetened almond milk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon blue spirulina powder
  • 1/4 cup chia seeds

Nicecream

  • 5 frozen bananas (very ripe and pre-sliced)
  • 100g frozen cauliflower (steamed before freezing)
  • 100g frozen mango
  • 1 tablespoon blue spirulina powder
  • 50ml unsweetened almond milk

Preparation

  1. Mix the chia pudding ingredients together in a bowl and refrigerate overnight.

  2. Blend the nicecream ingredients in a blender until smooth.

  3. Serve the chia pudding topped with the nicecream.
