Ingredients

  • Smoothie: (all very rough estimates) ~1 inch ginger, 1 large banana, 1.5 cups Trader Joe's frozen berry blend, 1 cup frozen spinach, 1 cup kale, 2 tbsp ground flax, 1.5 cups almond milk
  • Lunch
  • Salad: arugula, 1/2 packet tempeh (cooked in maple syrup & soy sauce), tomato, cucumber, 2 small sweet potatoes
  • Dressing: 1 tsp each of hummus, Trader Joe's hot sauce, maple syrup, apple cider vinegar, soy sauce, + water to thin
  • Dinner
  • Leftover pasta in Trader Joe's Grecian Style Eggplant w Tomatoes & Onions (canned) with brussels sprouts
