Fluffy Pink Pitaya Banana Nice Cream

Ingredients

  • 2 frozen bananas
  • 1/4 cup frozen pitaya
  • 1/4 cup plant milk (coconut milk for me!)
  • 1 big scoop of coconut cream
  • 1 tbsp pitaya powder @unicornsuperfoods

Preparation

  1. Blend in a high speed blender like a Vitamix or food processor.

  2. Use the tamper to push ingredients towards the blades.

  3. You can also try letting the ingredients sit in the blender for 45 seconds to help thaw them and make it easier on the blender.

  4. Ensure all ingredients are frozen for the desired thickness.

  5. Use 1/4 cup liquid for every 2 frozen bananas.

  6. Top with coconut whipped cream (made from coconut cream and coconut milk) and fresh blueberries.
