Chipotle Chicken, Bean and Lentil Stew - Protein Goals
Ingredients
- x2 chicken breasts
- 100g lentils
- 400g chopped tomatoes
- 400g kidney beans
- x1 onion
- x1 sweet pepper
- x1 wee bit grated ginger
- x4 tbsp chipotle paste or sauce
- 450ml chicken stock
- 1. fry the onion, ginger and chicken till browned

Preparation
Fry the onion, ginger and chicken till browned
Pour in the chopped tomatoes, chipotle paste/sauce and kidney beans and stir
Pour in the chicken stock and boil, simmer for 20 mins
