Chipotle Chicken, Bean and Lentil Stew - Protein Goals

Ingredients

  • x2 chicken breasts
  • 100g lentils
  • 400g chopped tomatoes
  • 400g kidney beans
  • x1 onion
  • x1 sweet pepper
  • x1 wee bit grated ginger
  • x4 tbsp chipotle paste or sauce
  • 450ml chicken stock
  • 1. fry the onion, ginger and chicken till browned

Preparation

  1. Fry the onion, ginger and chicken till browned

  2. Pour in the chopped tomatoes, chipotle paste/sauce and kidney beans and stir

  3. Pour in the chicken stock and boil, simmer for 20 mins
