Comfy Vegan Goulash with Mashed Potatoes and Thyme
Ingredients
- 1 onion
- 2 cloves garlic
- 200g mushrooms
- 1/2 eggplant (200g)
- 150g carrots
- 2 teaspoons cumin
- 2 teaspoons paprika
- 1/2 teaspoon chilli, optional
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 can (140g) tomato puree
- 1 liter vegetable broth
Preparation
Wash and chop mushrooms, eggplant, carrots, onion, and garlic
Cook the vegetables in a pan with olive oil
Add cumin, paprika, chilli, black pepper, and salt, and cook for a few minutes
Add tomato puree and vegetable broth
Stir everything together and cook for 1 hour
Taste and adjust seasoning if needed
Serve with mashed potatoes and fresh thyme
