Comfy Vegan Goulash with Mashed Potatoes and Thyme

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 200g mushrooms
  • 1/2 eggplant (200g)
  • 150g carrots
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1/2 teaspoon chilli, optional
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 can (140g) tomato puree
  • 1 liter vegetable broth

Preparation

  1. Wash and chop mushrooms, eggplant, carrots, onion, and garlic

  2. Cook the vegetables in a pan with olive oil

  3. Add cumin, paprika, chilli, black pepper, and salt, and cook for a few minutes

  4. Add tomato puree and vegetable broth

  5. Stir everything together and cook for 1 hour

  6. Taste and adjust seasoning if needed

  7. Serve with mashed potatoes and fresh thyme
