Hearty Veggie Noodle Soup

Ingredients

  • 3 Ribs of Celery
  • 1 Small Onion
  • 2 Large Carrots
  • 2 cloves of Garlic
  • Cup of Sliced Mushrooms
  • Can of Diced Tomatoes
  • 1/3 cup Peas
  • 2 Small Potatoes
  • Can of Kidney Beans
  • Can of Garbanzo Beans
  • 1 1/4 cups cooked Pasta
  • 2 Tbsp of Tomato Paste
  • 5 cups of water
  • 2 tsp of Dill
  • 1 tsp of Thyme
  • 2 Bay Leaves
  • Salt & Pepper to taste
  • Optional: 1 -2 Tbsp of Liquid Aminos

Preparation

  1. Sauté all the Veggies except the peas along with the herbs until the onions are translucent

  2. Add in the Beans, Tomato Paste and Diced Tomatoes and simmer for about 15 minutes on med low heat

  3. Cover with water check for seasoning and let simmer for about 20 minutes or until potatoes and carrots are tender

  4. Add in the peas and cooked pasta and continue to cook for another 15 minutes before serving
