Korean Kimchi Soup

Ingredients

  • 1 onion, diced
  • 4 cloves of garlic
  • 1 inch fresh ginger
  • 1 cup of kimchi
  • 5 cups of broth/water
  • 1 Thai red chilli , whole
  • 1/2 package of gf pasta
  • 1block of medium tofu
  • 1 tbsp of gf tamari
  • 1 cup of cut up broccoli

Preparation

  1. Heat onion in a tbsp of oil for 4 mins, until transparent, then add garlic and ginger and cook for another min

  2. Add broth, kimchi, red chilli

  3. Cover and simmer for 10 mins for flavour to develop

  4. Then add broccoli, tofu, tamari

  5. Simmer for another 5 -10 min (depending on how crunchy you like your broccoli)

  6. Season to taste

  7. Serve with noodles, fresh green onions and black sesame seeds
