Pumpkin Soup

Ingredients

  • 1 medium sized hokkaido squash
  • 3 small potatoes
  • 1 small apple, peeled and chopped
  • 1/4 onions
  • 1/2 garlic clove
  • 2 tablespoons olive oil
  • 1-2 teaspoons vegetable broth
  • salt and pepper to taste

Preparation

  1. First, you need to add to a big pot the oil, onions and garlic as well as the apple

  2. Let it sauté a bit until you add water to cook the potatoes along with the squash

  3. Let that cook until the potatoes and squash (softly cooked) are cooked

  4. Add salt and pepper to your taste and add the vegetable broth

  5. Mix everything together and let it cook for a bit before using the hand mixer and mashing everything up until you have a soup consistency! Next serve and ENJOY it with some sprinkled cinnamon on top
