Raw Butternut Squash Soup

Ingredients

  • 3 cups cubed butternut squash
  • 1/4 white onion
  • 1 garlic clove
  • 2 pitted dates
  • 1/2 red bell pepper
  • 1 small handful cashews (optional)
  • 1 1/2 cup coconut water
  • 1/2 tsp curry
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 Roma tomato or handful grape tomatoes

Preparation

  1. Throw ingredients in a high speed blender until desired temperature is desired (3-5 min)

  2. Enjoy as is or top with some diced bell peppers, green onions, chopped celery, cilantro, or parsley
