Soup Always Makes Me Feel Cozy

Ingredients

  • add a cup of spring water ? to your pot
  • add 1/4 stick of vegan butter
  • add chopped fresh garlic ?
  • add chopped shallots
  • add chopped leeks
  • add a little himalayan pink salt
  • add a little cayenne pepper
  • add a cup of low sodium veggie broth
  • chop up cauliflower and let steam till tender
  • chop up 1/4 purple cabbage
  • chop a bunch of kale
  • add cauliflower and cabbage and let simmer until tender
  • add more seasoning if you like

Preparation

  1. Add a cup of spring water ? to your pot

  2. Add 1/4 stick of vegan butter

  3. Add chopped fresh garlic ?

  4. Add chopped shallots

  5. Add chopped leeks

  6. Add a little Himalayan pink salt

  7. Add a little cayenne Pepper

  8. Add a cup of low sodium veggie broth

  9. Let simmer and stir occasionally for about 5-10 mins

  10. Chop up cauliflower and let steam till tender

  11. Chop up 1/4 purple cabbage ?

  12. Chop a bunch of kale ?

  13. Add cauliflower and cabbage and let simmer until tender

  14. Taste your broth to see if it has the flavor at you like

  15. Add more seasoning if you like

  16. I added a touch of dried rosemary (don’t ask why lol)

  17. At the very end, add your kale and 1/4 more cup of veggie broth

  18. Let simmer for another 10 mins and then add chopped scallions

  19. I also added about 3 frozen veggie gyoza in there. (The filling of the gyoza kinda spilled out so that’s why you see a little carrots ? in the mix.) Turn off heat and get ready to eat
