Vegan Instant-Pot 25-Minute Black Bean Soup

Ingredients

  • 1 pound dry black beans
  • water to barely cover the beans
  • 3 cups veggie broth
  • 3 different color bell peppers, chopped
  • 1 red onion, chopped
  • 1 bag of frozen corn
  • 2 tbsp chile powder
  • 1.5 tsp ground cumin
  • 1 tsp salt

Preparation

  1. Put all the ingredients in your @instantpotofficial and put it on bean/chili nice for 25-30 minutes and leave it alone. I paired my soup with fresh cashew cream mixed with apple cider vinegar and salt to mimic sour cream and it was THE BOMB
