Vegan Instant-Pot 25-Minute Black Bean Soup
Ingredients
- 1 pound dry black beans
- water to barely cover the beans
- 3 cups veggie broth
- 3 different color bell peppers, chopped
- 1 red onion, chopped
- 1 bag of frozen corn
- 2 tbsp chile powder
- 1.5 tsp ground cumin
- 1 tsp salt
Preparation
Put all the ingredients in your @instantpotofficial and put it on bean/chili nice for 25-30 minutes and leave it alone. I paired my soup with fresh cashew cream mixed with apple cider vinegar and salt to mimic sour cream and it was THE BOMB
