Scrambled Paneer (Or Tofu) Frankies

Ingredients

  • 1 tbsp rapeseed oil or ghee
  • 1 tspn cumin seeds
  • 1/4 tspn asafoetida which is hing (optional but great for the gut)
  • 1 cup finely chopped white onions
  • 1 tspn chopped ginger or paste
  • 1 tsp chopped garlic
  • 1/2 cup chopped fresh tomatoes
  • 2 tspn chopped green chillies (not for the kids)
  • 1 tspn coriander & cumin powder
  • 1/2 tsp turmeric powder
  • 1 tspn red chilli powder
  • 1/2 tspn garam masala
  • 2 tbsp lemon juice
  • salt to taste
  • 30g chopped coriander

Preparation

  1. Heat the oil or ghee in a pan and add cumin seeds and asafoetida

  2. When they start to crackle, shortly after add onions ginger & garlic & fry to brown (all 3 can be chopped in a chopped together)

  3. Chop up your tomatoes, peppers and crumble your paneer

  4. The onions will have browned by now so add your tomatoes and green chilli

  5. Mix and add all your spices cook for 1-2mins

  6. Add your paneer and lemon juice

  7. Cook for 2-3mins then garnish with coriander and serve in parathas to make your frankie rolls
