Taquitos
Ingredients
- 12 medium tortillas
- 1 tbsp avocado oil
- 2- 14oz cans jackfruit, drained, rinsed, and shredded
- 1/2 small yellow onion, chopped
- 1/2 jalapeño, seeded and diced
- 3 garlic cloves, minced
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp oregano
- 8 oz cream cheese, softened
- 1/2 cup salsa
Preparation
Heat oil over medium heat and cook onions, jalapeños, and garlic until softened. Stir in jackfruit, seasonings, cream cheese and salsa until mixed well. Remove from heat. Assemble taquitos by adding some filling to each tortilla and roll them up tightly. Heat 1 tbsp of avocado oil in a large skillet and cook taquitos until golden brown. Rotating as needed. **these make 12 taquitos. Only assemble the amount you are going to eat that night. Taquitos are best fresh off of the skillet! The crispier the better
