ÇIğ Köfte

Ingredients

  • 1 cup fine bulgur
  • 1 cup hot water
  • 1 handfull persil
  • 2-3 garlic cloves
  • 1 onion, shredded and dried (remove the water squeezing with your hands)
  • 3-4 tbsp tomato paste
  • 5-6 tbsp olive oil
  • 2 tbsp sweet paprika
  • 1 tbsp spicy paprika
  • 1 tbsp salt
  • 1 tsp pepper
  • 1/2 tsp cumin
  • 1 tsp ginger
  • 2 tbsp pomegranate juice
  • 1 medium tomato shredded
  • juice of 1 lemon
  • 1/3 cup walnuts (crushed finely)
  • 1/4 tsp cinnamon

Preparation

  1. In a big bowl mix bulgur and water and let rest for 5 min

  2. Add all the rest of ingredients and mix well, knead for 10-15 min

  3. Enjoy it in a wrap with some lettuce, onion, tomatoes and pomegranate sauce

  4. For the pomegranate sauce: 2 tbsp pomegranate juice powder, 1 tbsp water, 1 tbsp tamari sauce, 1 tbsp agave syrup

  5. You can add some hummus as well
