ÇIğ Köfte
Ingredients
- 1 cup fine bulgur
- 1 cup hot water
- 1 handfull persil
- 2-3 garlic cloves
- 1 onion, shredded and dried (remove the water squeezing with your hands)
- 3-4 tbsp tomato paste
- 5-6 tbsp olive oil
- 2 tbsp sweet paprika
- 1 tbsp spicy paprika
- 1 tbsp salt
- 1 tsp pepper
- 1/2 tsp cumin
- 1 tsp ginger
- 2 tbsp pomegranate juice
- 1 medium tomato shredded
- juice of 1 lemon
- 1/3 cup walnuts (crushed finely)
- 1/4 tsp cinnamon
Preparation
In a big bowl mix bulgur and water and let rest for 5 min
Add all the rest of ingredients and mix well, knead for 10-15 min
Enjoy it in a wrap with some lettuce, onion, tomatoes and pomegranate sauce
For the pomegranate sauce: 2 tbsp pomegranate juice powder, 1 tbsp water, 1 tbsp tamari sauce, 1 tbsp agave syrup
You can add some hummus as well
