Egg Salad Sandwich

Ingredients

  • 7 oz tofu, diced into small cubes
  • • 1 tbsp vegan yogurt or mayo
  • • 1 tbsp whole grain mustard or dijon
  • • 1 tbsp finely chopped dill
  • • 1/2 tsp smoked paprika
  • • 1/2 tsp salt
  • • 1/4 tsp pepper or to taste
  • • 1/4 tsp red pepper flakes

Preparation

  1. Whisk together all ingredients except tofu in a large bowl until creamy

  2. Add in diced tofu and carefully stir to coat

  3. Adjust taste with s+p

  4. Layer tofu on toasted bread with thinly sliced red onion and greens
