High Protein Tofu Pasta Sauce

Ingredients

  • 200g linguine or lentil pasta
  • 500g silken tofu
  • 280g jar sun-dried tomatoes in olive oil
  • 1 tbsp olive oil
  • 4-6 cloves garlic, sliced
  • 400g baby spinach leaves
  • 300g purple sprouting broccoli, sliced

Seasonings

  • Black pepper and chilli flakes, to serve

Preparation

  1. Blend the silken tofu and sun-dried tomatoes to form a sauce

  2. Cook the pasta as per pack instructions

  3. Fry the garlic in the oil, once starting to turn golden, add the vegetables and a slash of pasta water. Pop the lid on the pan for a few minutes so the veggies can cook

  4. Stir in your sauce, cooked drained pasta, pepper and chilli flakes to taste. Add a splash of pasta water to adjust the consistency and serve

Tips

  1. Add butter beans, lentils, or a sprinkle of cheese to increase protein

  2. Use lentil pasta for extra protein

  3. For non-vegetarians, add chicken or prawns
