High Protein Tofu Pasta Sauce
Ingredients
- 200g linguine or lentil pasta
- 500g silken tofu
- 280g jar sun-dried tomatoes in olive oil
- 1 tbsp olive oil
- 4-6 cloves garlic, sliced
- 400g baby spinach leaves
- 300g purple sprouting broccoli, sliced
Seasonings
- Black pepper and chilli flakes, to serve
Preparation
Blend the silken tofu and sun-dried tomatoes to form a sauce
Cook the pasta as per pack instructions
Fry the garlic in the oil, once starting to turn golden, add the vegetables and a slash of pasta water. Pop the lid on the pan for a few minutes so the veggies can cook
Stir in your sauce, cooked drained pasta, pepper and chilli flakes to taste. Add a splash of pasta water to adjust the consistency and serve
Tips
Add butter beans, lentils, or a sprinkle of cheese to increase protein
Use lentil pasta for extra protein
For non-vegetarians, add chicken or prawns
