Tofu Burritos with Cashew Salsa

Ingredients

Cashew salsa

  • 2 C salsa
  • 1 tsp cilantro paste or a handful of cilantro
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder or paste
  • 2 C soaked cashews, rinsed
  • 1 tsp hot sauce for taste

Tofu filling

  • A block of extra firm tofu, crumbled
  • 4 tbsp nutritional yeast
  • 1 cup cashew salsa
  • 1/2 tsp salt
  • 1 tsp aminos or soy sauce
  • 1 tsp onion powder
  • 1/2 cube veg bouillon
  • 1 tbsp lime juice
  • A dash pepper
  • 1/4 tsp cumin powder
  • 1 tsp cilantro paste

Additional components

  • Beans
  • Avocado, sliced
  • Potato fries, sliced and baked
  • Micro greens
  • Purple cabbage

Preparation

  1. Place cashew salsa ingredients into a blender and blend until smooth, adding water if necessary for blending

  2. Crumble a block of extra firm tofu with your fingers

  3. Add tofu and filling ingredients to a pan, stir and mix until it resembles an eggy consistency

  4. Prepare additional components by slicing avocado and purple cabbage, and baking potato fries until crispy

  5. Assemble the burrito with all components and roll it thick

  6. Optionally use a blow torch to brown the top of the burrito
