Tofu Burritos with Cashew Salsa
Ingredients
Cashew salsa
- 2 C salsa
- 1 tsp cilantro paste or a handful of cilantro
- 1 tbsp lime juice
- 1/2 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder or paste
- 2 C soaked cashews, rinsed
- 1 tsp hot sauce for taste
Tofu filling
- A block of extra firm tofu, crumbled
- 4 tbsp nutritional yeast
- 1 cup cashew salsa
- 1/2 tsp salt
- 1 tsp aminos or soy sauce
- 1 tsp onion powder
- 1/2 cube veg bouillon
- 1 tbsp lime juice
- A dash pepper
- 1/4 tsp cumin powder
- 1 tsp cilantro paste
Additional
- Beans
- Avocado, sliced
- Potato fries, sliced and baked
- Micro greens
- Purple cabbage
Preparation
Place cashew salsa ingredients into a blender and blend until smooth, adding water if needed.
Add tofu filling ingredients to a pan with crumbled tofu, stir and mix until it resembles an eggy consistency.
Assemble the burrito with additional ingredients and roll it thick.
Tips
Use a blow torch optionally to brown the top of the burrito.
