Crunchy sweet patato salad
Ingredients
- 1/2 eggplant
- 1 sweet potato
- 4 mushrooms
- 3tb tahini
- 3tb olive oil
- 1/2ts salt
- 1/2ts chili flakes
- 5tb lemon
- 1/2ts thyme
Preparation
Cut the eggplant and sweetpotato into cubes
Cut the mushrooms in slices
Place sweet potato on a baking tray
Add olive oil, salt and thyme on top
Place in the oven for 10 minutes
Add the eggplant, bake another 10 minutes
Add the mushrooms, bake for another 10 minutes
Chop basil and parsley
Mix all the other ingredients to create the sauce (besides the sesame seeds)
Mix the veggies with the sauce
Serve with sesame seeds sprinkled on top
