Healthy Vegan Bowl with Crunchy Eggplant Bites
Ingredients
- 1 large eggplant, sliced
- 4 tbsp flour
- 2 tbsp rice flour
- 100ml water
- 1 cup breadcrumbs
- 1 1/2 tsp chili flakes (optional)
- Salt and pepper to taste
Preparation
Mix the batter mixture (4 tbsp flour, 2 tbsp rice flour, 100ml water) well and set aside.
Mix together the dry ingredients (1 cup breadcrumbs, 1 1/2 tsp chili flakes optional, salt and pepper to taste).
Heat 1 tbsp of oil in a large skillet over medium-high heat.
Dip the eggplant slices in the batter mixture, then coat with the breadcrumbs mixture, and place on the heated skillet.
Fry for 2 to 3 minutes on each side until golden brown.
Drain the fried eggplant on paper towels.
