Healthy Vegan Bowl with Crunchy Eggplant Bites

Ingredients

  • 1 large eggplant, sliced
  • 4 tbsp flour
  • 2 tbsp rice flour
  • 100ml water
  • 1 cup breadcrumbs
  • 1 1/2 tsp chili flakes (optional)
  • Salt and pepper to taste

Preparation

  1. Mix the batter mixture (4 tbsp flour, 2 tbsp rice flour, 100ml water) well and set aside.

  2. Mix together the dry ingredients (1 cup breadcrumbs, 1 1/2 tsp chili flakes optional, salt and pepper to taste).

  3. Heat 1 tbsp of oil in a large skillet over medium-high heat.

  4. Dip the eggplant slices in the batter mixture, then coat with the breadcrumbs mixture, and place on the heated skillet.

  5. Fry for 2 to 3 minutes on each side until golden brown.

  6. Drain the fried eggplant on paper towels.
