Spinach Rice Crepes with Enhanced Nutrition
Ingredients
- Rice flour - 1 cup
- Spinach - 1/3 cup (Baby spinach)
- Salt - according to your taste
- Water - 2 1/2 cup
Preparation
In a blender, add some water and spinach leaves. Blend to make a puree.
In a large bowl, mix rice flour, salt, spinach puree, and water. Mix well to achieve a thin, watery consistency.
Heat a nonstick pan.
Pour the batter onto the hot pan. Do not spread with a spoon; allow it to form a round crepe, adding more batter if necessary. This may require practice and patience.
Flip and cook the other side as well. Total cooking time is 1 to 2 minutes. You can cover it to make softer crepes.
Once done, serve with your favorite mint chutney or hummus. Alternatively, fill with mashed curried potatoes.
