Spinach Rice Crepes with Enhanced Nutrition

Ingredients

  • Rice flour - 1 cup
  • Spinach - 1/3 cup (Baby spinach)
  • Salt - according to your taste
  • Water - 2 1/2 cup

Preparation

  1. In a blender, add some water and spinach leaves. Blend to make a puree.

  2. In a large bowl, mix rice flour, salt, spinach puree, and water. Mix well to achieve a thin, watery consistency.

  3. Heat a nonstick pan.

  4. Pour the batter onto the hot pan. Do not spread with a spoon; allow it to form a round crepe, adding more batter if necessary. This may require practice and patience.

  5. Flip and cook the other side as well. Total cooking time is 1 to 2 minutes. You can cover it to make softer crepes.

  6. Once done, serve with your favorite mint chutney or hummus. Alternatively, fill with mashed curried potatoes.
