Sweet and Sour Lotus Root

Ingredients

  • lotus root 400g
  • garlic 3 cloves
  • rice vinegar/chinese dark vinegar 3 tbsp
  • sugar 3 tbsp
  • soy sauce 2 tbsp
  • cooking wine 1 tbsp
  • corn/potato starch 1 tsp
  • spring onion 1 stalk

Preparation

  1. Cut the lotus root into small cubes(each side about 2cm long), cut the garlic and spring onion into pieces.

  2. Get a bowl, add 3 tbsp vinegar, 3 tbsp sugar, 2 tbsp soy sauce, 1 tbsp cooking wine, 1 tsp of corn/potato starch and mix everything well

  3. Add oil in the pan(medium heat), add lotus and slowly stir-fry for about 3 minutes, then add garlic and sauté for another minute

  4. Add the bowl of sauce, let the lotus cooked in the sauce for about 5 minutes until most of the sauce is gone, stir occasionally in between. Add spring onion when it's done.
