Vegan Thai 'Fish' Cakes

Ingredients

  • 30g dried shiitake mushroom⁣
  • 80g rice flour⁣
  • 3 tbs soy sauce⁣
  • 200ml vegetable oil⁣

Preparation

  1. Soak mushrooms for 15 mins in hot water, drain, remove stems and slice in to slivers

  2. Drain jackfruit from can, place into a saucepan and cover with cold water

  3. Bring to a boil and boil for 15 mins

  4. Drain then set aside. ⁣

  5. In a pan fry curry paste in 3 tbs of veg oil for 5 mins until colour deepens

  6. Stir vigorously to avoid burning. Let cool. ⁣

  7. Add sliced mushrooms and jackfruit into a big bowl

  8. Mix in cooked curry paste and soy sauce

  9. Add rice flour and knead into a dough

  10. Shape dough into 10 little balls and flatten into cakes. ⁣

  11. In a saucepan heat oil until it shimmer

  12. Drop half the cakes and fry for 3-4 minutes

  13. Remove with a slotted spoon and lay on paper towel

  14. Do the same for the other 5 cakes

  15. Serve with light soy sauce and chopped chilli
