A Batch of Banana and Coconut Muffins

Ingredients

  • 150g wholemeal flour
  • 150g plain flour
  • 1 tbsp baking powder
  • 1 egg
  • 150ml olive oil
  • 180ml maple syrup
  • 80ml milk of choice
  • 250g mashed banana
  • 100g desiccated coconut

Preparation

  1. Preheat oven to 180C and line a muffin tin with cases

  2. Add the flours and baking powder in a large bowl and mix to combine

  3. Crack the egg into another bowl and add the olive oil, maple and milk, then whisk to mix. Pour the egg mixture into the flour bowl and gently combine together. Fold in the banana and coconut

  4. Spoon the mixture equally into the prepped muffin cases and bake for 25 mins or until cooked through (test with a knife - it should come out clean). Allow to cool and then enjoy
