Chocolate and Berry Loaf

Ingredients

  • 1 banana
  • 1 tsp vanilla extract
  • 80ml golden syrup
  • 180g plain flour
  • 1 and 1/2 tsp baking powder
  • 120ml plant milk (i used soya)
  • 150g frozen berries
  • 40g dark chocolate, chopped into chunks

Preparation

  1. Preheat the oven to 180 degrees

  2. Grease and line a loaf tin

  3. Slice the banana and add to a mixing bowl

  4. Mash with a fork

  5. Add the vanilla extract and golden syrup to the bowl and mix into the banana

  6. Fold in the flour, baking powder and milk

  7. Add the berries and chocolate and mix in

  8. Pour into the lined loaf tin and place in the oven for 40-45 minutes or until a skewer comes out clean

  9. Optional- if you have any spare chocolate, melt and drizzle on top of the cake once cooled!

  10. Alternative idea…

  11. Make some muffins instead, just scoop the batter into muffin cases and cook for 20 minutes
