Healthy Vegan Ice Pops

Ingredients

  • 1 cup water;
  • 1 cup shredded coconut;
  • 2 small handfuls raw cashews;
  • 1 tsp vanilla extract;
  • raspberry:
  • 2 tbsp of the coconut vanilla cream;
  • 1 tbsp light maple syrup (or honey)?;
  • 2 tbsp water;
  • 1 tbsp ground goji berries (i grind it in the coffee grinder);
  • blue banana:
  • 2 bananas ?*(i used frozen);
  • 2 tbsp coconut vanilla cream;
  • 1 tsp blue spirulina;
  • Blue banana
  • 2 Bananas ?*(I used frozen)
  • 2 Tbsp coconut vanilla cream
  • 1 tsp blue spirulina

Preparation

  1. Blend all ingredients for the Vanilla Coconut Cream and set apart

  2. Blend all ingredients for the raspberry flavor and pour into an ice-pop mold and freeze for about 15min or until firms up a bit

  3. Remove from the freezer and pour the vanilla coconut cream and freeze again while making the last blue layer

  4. Blend the Blue Banana flavor ingredients and pour on top of the coconut cream. Put the popsicle sticks in it and return in the freezer for around half an hour or more before they are ready to serve
