Homemade Pulled BBQ Jackfruit

Ingredients

  • 2 cans young green jackfruit in water
  • 1 brown onion, finely sliced
  • 1 cup vegetable stock
  • 2 tablespoons coconut sugar
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon chili powder
  • 1 cup BBQ sauce
  • 2 tablespoons olive oil

Preparation

  1. Preheat the oven to 200°C.

  2. Mix together the sugar, paprika, garlic powder, salt, pepper, and chili powder.

  3. Rinse, drain, and remove the core of the jackfruit.

  4. Toss the jackfruit in the seasoning to coat well.

  5. Heat the oil in a large Dutch oven over medium heat.

  6. Add the onion and sauté until translucent.

  7. Add the seasoned jackfruit and cook for a couple of minutes.

  8. Add the vegetable stock, stir, reduce heat to low-medium, and cook for about 15 minutes, stirring occasionally, until the jackfruit is soft enough to shred with two forks.

  9. Add the barbecue sauce and place in the oven with a lid on for 10 minutes.

  10. Remove the lid and roast for a further 10 minutes until golden.

  11. Add more barbecue sauce if desired.
