Chocolate Sweet Potato Muffins
Ingredients
- 1 cup steamed and mashed sweet potato
- 1 tablespoon cinnamon
- 1/4 cup almond butter
- 1/3 cup coconut sugar
- 2 eggs
- 1/2 teaspoon baking powder
- 1/4 cup vanilla protein or all purpose flour
Filling and frosting
- kweenandco chocolate granola butter
Preparation
Preheat oven to 350F and spray or line a mini muffin tin
Put all of the ingredients into a food processor or high-powered blender and blend until everything is well combined
Pour batter into mini muffin tin, add a layer of granola butter in the middle if desired, and bake for 12 minutes
