Chocolate Sweet Potato Muffins

Ingredients

  • 1 cup steamed and mashed sweet potato
  • 1 tablespoon cinnamon
  • 1/4 cup almond butter
  • 1/3 cup coconut sugar
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/4 cup vanilla protein or all purpose flour

Filling and frosting

  • kweenandco chocolate granola butter

Preparation

  1. Preheat oven to 350F and spray or line a mini muffin tin

  2. Put all of the ingredients into a food processor or high-powered blender and blend until everything is well combined

  3. Pour batter into mini muffin tin, add a layer of granola butter in the middle if desired, and bake for 12 minutes
