Blackberry Almond Butter Cupcakes
Ingredients
- 1/4 cup all purpose flour
- 1/4 cup coconut sugar
- 1/2 tsp. baking powder
- 1/4 cup mashed blackberries
- 1/4 cup almond butter
- 2 eggs
Preparation
Preheat oven to 350F and spray or line a mini muffin tin.
Whisk together the eggs, almond butter, and blackberries, then stir in the dry ingredients.
Pour the batter into the muffin tin, filling each about 3/4 full, and bake for 10 minutes. I topped mine with vanilla icing and blackberries.
