Blackberry Almond Butter Cupcakes

Ingredients

  • 1/4 cup all purpose flour
  • 1/4 cup coconut sugar
  • 1/2 tsp. baking powder
  • 1/4 cup mashed blackberries
  • 1/4 cup almond butter
  • 2 eggs

Preparation

  1. Preheat oven to 350F and spray or line a mini muffin tin.

  2. Whisk together the eggs, almond butter, and blackberries, then stir in the dry ingredients.

  3. Pour the batter into the muffin tin, filling each about 3/4 full, and bake for 10 minutes. I topped mine with vanilla icing and blackberries.
