Easy Vegan Soft Pear Cake
Ingredients
Batter
- 100ml vegetable oil
- 100g sugar of choice
- 1 tbsp vanilla extract
- 270ml soy milk
- 2 cups of flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tbsp apple vinegar
Additional components
- 1 big pear
- Juice of a half lemon
- 1 tbsp vanilla
- Powdered sugar for dusting
Preparation
Preheat the oven to the appropriate temperature for baking a cake, typically around 350°F or 180°C
In a bowl, mix the wet batter ingredients together until well combined
In another bowl, sift and mix the dry batter ingredients
Combine the wet and dry mixtures to form the batter, stirring until smooth
Prepare the pear by peeling, coring, and slicing it, then toss with lemon juice and vanilla to prevent browning
Fold the pear mixture into the batter or layer it in the cake pan as desired
Pour the batter into a greased cake pan and bake until a toothpick inserted comes out clean, about 30-40 minutes
Allow the cake to cool before dusting with powdered sugar and serving
