Peanut Butter Cookie Dough and Banana Slice Parfait
Ingredients
Cookie Dough
- 1/2 cup peanut butter
- 1 cup coconut flour
- 1 cup sunflower flour
- 1/2 cup chocolate chips or cacao nibs
- 3 tablespoons pure maple syrup
- 2 tablespoons coconut oil, melted
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 scoops vanilla protein powder
- 1/4 cup plant-based milk
Banana Layer
- 3 frozen bananas, sliced
- 1/2 cup peanut butter
- 1/2 cup plant-based milk
- 2 scoops vanilla protein powder (Noway)
- Salt
Choc Top
- 1/4 cup coconut oil, melted
- 1/4 cup cacao powder
- 2 tablespoons pure maple syrup
- 2 tablespoons coconut cream, room temp
Preparation
In a mixing bowl, combine all the ingredients for the cookie dough layer. Mix well until you get a cookie dough-like consistency. Set aside.
For the banana layer, blend the frozen banana slices, peanut butter, plant-based milk, vanilla protein powder, and a pinch of salt until smooth. Set aside.
To make the chocolate topping, whisk together melted coconut oil, cacao powder, pure maple syrup, and coconut cream until well combined.
Assemble the parfait: In serving glasses or bowls, start by layering a portion of the cookie dough mixture as the base.
Add a layer of the banana mixture on top of the cookie dough layer.
Repeat the layers until you reach the top of the glass or bowl.
Drizzle the chocolate topping over the parfait.
Optionally, garnish with additional chocolate chips, cacao nibs, or sliced bananas.
Serve immediately or refrigerate until ready to eat.
