Sweet Potato Brownies
Ingredients
Brownie
- 6 fresh dates
- 0.5 cup coconut sugar
- 0.5 cup sweet potato (boiled)
- 0.5 cup coconut flour
- 4 tbsp coconut oil
- 1/2 tsp salt
- 0.5 cup cacao powder
- 0.5 cup almond milk
- 1/2 tsp salt
- 2 flaxeggs (2 tbsp flaxseeds + 4 tbsp water)
Frosting
- 100g vegan chocolate
- 4 tbsp coconut cream
Preparation
Preheat the oven to 175 degrees Celsius.
Cut the sweet potato into cubes and boil until soft. Let it rest for about 10 minutes.
Mix the sweet potato and the rest of the ingredients in a food processor until combined. Pour the batter into a mold and bake in the oven for 25 minutes.
Start making the frosting by melting 100g vegan chocolate and adding the coconut cream. Pour it over the cake and refrigerate for 1 hour before serving.
