Vegan & Gluten-Free Heart-Shaped Chocolate Chip Cookies

Ingredients

Cookies

  • 2 cups almond flour
  • 3 tbsp coconut flour
  • 1/2 cup coconut sugar
  • 1/2 cup almond milk
  • 1/2 cup melted coconut oil
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips

Chocolate Layer

  • 1/2 cup mini chocolate chips
  • 1 tsp coconut oil

Preparation

  1. In a bowl, mix all the cookie ingredients together until well combined.

  2. Roll out the cookie dough on parchment paper.

  3. Use a heart-shaped cookie cutter to shape the cookies.

  4. Place the shaped cookies on a greased baking sheet.

  5. Bake at 350°F (175°C) for 14-15 minutes.

  6. Remove from the oven and let the cookies cool completely before handling.

For the Chocolate Layer

  1. In a microwave-safe bowl, melt the chocolate chips and coconut oil together in 30-second intervals, stirring between each interval, until fully melted.

  2. Dip half of each heart-shaped cookie into the melted chocolate mixture.

  3. Optionally, add sprinkles on top of the chocolate-coated half of the cookies.

  4. Place the dipped cookies on a plate lined with parchment paper to prevent sticking.

  5. Once all cookies are dipped and decorated, store them in the fridge to allow the chocolate layer to set.
