Vegan Black Bean Brownies

Ingredients

Brownie

  • 230g black beans (already boiled or packaged ones)
  • 10-12 fresh dates (190g)
  • 1 tbsp cold brewed coffee
  • 1 tbsp vanilla pea protein powder (or 1 tbsp rice flour + 1/2 tsp vanilla extract)
  • 60g coconut oil
  • 30g cacao powder

Frosting

  • 100g dark vegan chocolate
  • 1 tbsp agave syrup
  • 30g oat milk
  • Sprinkles

Preparation

  1. Preheat the oven to 180 degrees Celsius.

  2. Pit the dates and place in a food processor along with all the other ingredients for the brownie. Mix.

  3. Pour the batter in a 30cm classic loaf pan.

  4. Bake for 30 minutes.

  5. Melt the dark chocolate and oat milk. Blend together.

  6. Let the brownie cool down and top the brownie with the frosting and some sprinkles (optional).

  7. Keep in the fridge 20 minutes before serving.
