Brussels Sprouts Salad with Citrus Vinaigrette

Ingredients

  • 2 pounds brussel sprouts
  • 2 avocados, cubed
  • 1 pomegranate (at least 1 cup seeds)
  • 1 cup raspberries
  • 1 green apple, cubed or small slices
  • 1 cup walnuts
  • 1 cup dried cranberries

Citrus vinaigrette

  • 1/3 cup extra virgin olive oil
  • 2 tbsp champagne vinegar
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 2 tbsp fresh orange juice
  • 1 tbsp fresh lemon juice
  • 1/2 tsp maple syrup

Preparation

  1. Cut off the stems of the brussel sprouts and shred them using a food processor with a slicer disc or by hand.

  2. Add the apple, pomegranate, walnuts, and avocado to the shredded brussel sprouts.

  3. Optionally, add the dried cranberries and raspberries now or set them aside for topping to avoid smashing.

  4. Mix all the vinaigrette ingredients together.

  5. Pour the vinaigrette over the salad.

  6. Lightly toss the salad and serve.

Notes

  1. This recipe serves 6-8 people. For a smaller salad, halve all ingredient quantities.
