Basic Herb Vinaigrette for Salads

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 tbsp white vinegar
  • 1 tsp maple syrup
  • 1 tsp dry Italian spices
  • 1 pinch salt
  • 1 pinch crushed red pepper flakes
  • 1 pinch black pepper

Preparation

  1. Put all ingredients in a bowl, adding oil last while whisking, until slightly emulsified.

Tips

  1. Remember the ratio of oil to vinegar is 2:1 for this vinaigrette.

  2. Classically, the ratio is 3:1, but this version is more punchy and less oily.

  3. You can improvise by substituting flavored vinegars, different herbs, or infused oils.

  4. Omit the crushed red pepper flakes if you do not like spicy food.
