Easy Peasy Creamy Vegan Mac and Cheese

Ingredients

  • 1/2 cup raw cashews, soaked overnight or boiled for 15 mins and drained
  • 1 carrot, peeled and steamed/roasted
  • 1/4 cup nutritional yeast or vegan cheese
  • 1 tbsp lemon juice
  • 1/2 cup plant based milk
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder (optional)
  • 1/2 tsp dijon mustard (optional)
  • dash of turmeric (for colour)

Preparation

  1. Basically just blend all the ingredients together to form a smooth sauce, you can add more liquid (mylk or water) or seasonings to taste

  2. Pour into a saucepan and heat through until simmering

  3. Serve with cooked pasta (of your choice) and enjoy

  4. Optional: pour into a casserole dish and bake for 30 mins at 180 C with some sprinkled breadcrumbs on-top to get nice and crispy

  5. I served mine with some chopped up vegan bacon and lettuce (which i used as a taco as i live by this as the best way of eating pasta, you’ll thank me later)
