French Style Potato Salad with Tangy Dressing

Ingredients

Dressing

  • 3 1/2 tbsp apple cider vinegar
  • 3 1/2 tbsp extra virgin olive oil
  • 2 1/2 tbsp whole grain French mustard
  • salt and pepper to taste
  • 2 tbsp finely chopped dill

Potatoes

  • 1 kg (2.2 lb) fingerling potatoes or other small yellow potatoes
  • 3 green onions, finely chopped
  • 2 tbsp finely chopped parsley
  • salt and pepper to taste

Preparation

  1. Cut potatoes into approximately 2.5 cm thick slices and cook in a large pan with salted boiling water for 12-14 minutes or until tender, then drain and place in a large bowl.

  2. Add the green onions, parsley, salt and pepper, and gently mix.

  3. Whisk together the vinegar and olive oil for the dressing, then add the mustard, salt, pepper, and dill, and mix well.

  4. Add the dressing to the potato mixture and mix well to ensure all potatoes are coated.
