Grilled Courgettes with Whipped Feta and Pistachio Crumble

Ingredients

  • 8 baby courgettes (green and yellow)
  • 1 tbsp olive oil
  • 100g watercress

Whipped feta

  • 300g vegan yogurt
  • 150g vegan feta
  • Zest of 1/2 lemon
  • 1 tbsp olive oil
  • Salt and pepper

Crumble topping

  • 50g vegan feta
  • 30g pistachios
  • Small bunch of parsley
  • Zest of 1/2 lemon

Preparation

  1. Slice the baby courgettes in half and lightly score the flesh with a crisscross pattern. Coat with olive oil and griddle until tender and nicely charred.

  2. For the whipped feta, blend the vegan feta, yogurt, lemon zest, olive oil, salt and pepper until smooth and creamy.

  3. Finely chop the pistachios, parsley, lemon zest, and vegan feta to make a coarse, zesty crumble.

  4. To assemble, spread the whipped feta onto a plate, layer over the watercress, arrange the grilled courgettes on top, and finish with the crumble.
