Simple Vegan Potato Salad

Ingredients

  • 500g floury potatoes
  • 1 clove garlic, pressed
  • 1 tsp mustard
  • 3 tbsp vegan mayonnaise
  • 3 tbsp unsweetened plant-based yogurt
  • 4 gherkins, diced small
  • 1/2 handful chives, finely chopped
  • 1 1/2 handful dill, finely chopped
  • Salt and pepper to taste

  • Violets

Preparation

  1. Peel the potatoes and cut into half slices of 1/2 cm. Cook in a pan with water and a pinch of salt for 10 minutes. Drain and rinse with cold water.

  2. Mix the garlic with the mustard, vegan mayonnaise, and unsweetened yogurt. Add the diced gherkins, chives, and dill. Season with pepper and salt.

  3. Fold the potatoes into the mixture, taste again to see if it needs more pepper and salt, and decorate with the violets.

Tips

  1. Dill can be replaced with more chives if desired.
