German Spiced Peppernuts with Lemon Sugar Glaze
Ingredients
Dough
- 80 grams butter
- 80 grams sugar
- 1 egg
- 100 grams liquid honey
- 350 grams all-purpose flour
- 1 pinch ground nutmeg
- 1 pinch ground cinnamon
- 1 pinch ground anise
- 1 pinch ground black pepper
- 1 pinch ground cloves
- 1 pinch ground ginger
- 50 grams ground almonds
- 1 teaspoon baking powder
Glaze
- 75 grams powdered sugar
- 2 tablespoons lemon juice
Preparation
Beat butter, sugar, and egg until foamy.
Add liquid honey.
Mix flour with nutmeg, cinnamon, anise, black pepper, cloves, ginger, baking powder, and ground almonds.
Add the butter mixture to the dry ingredients and knead until well combined.
Line a baking sheet with parchment paper.
Preheat the oven to 150 degrees Celsius (convection 130 degrees).
Shape small balls from the dough with your hands and place them on the baking sheet with some space between.
Bake the peppernuts for about 15 minutes.
Let the peppernuts cool completely.
Mix powdered sugar with lemon juice for the glaze.
Brush the peppernuts with the sugar glaze using a brush.
Let the glaze drip and set on a wire rack.
