Haluski Cabbage and Noodles
Ingredients
- 8oz (227g) wide noodles
- 1 small head of cabbage (about 1 lb)
- 1 medium onion (200g)
- 3-4 Tbsp (45-60g) vegan butter
- 4 cloves garlic
- Salt and pepper to taste
Preparation
Shred the cabbage thinly by cutting it in half and removing the core.
Melt the vegan butter in a large skillet on medium low heat. Add the onions and sauté them stirring occasionally for 10 minutes or until they take on a golden color.
Bring a large pot of water to boil and cook the pasta according to package directions.
Add the shredded cabbage to the onions and mix well. Sauté for 7-10 minutes or until the cabbage becomes soft but retains its green color.
Season with salt and pepper and add in the garlic. Cook for a few minutes before adding in the cooked pasta. Mix well and allow everything to heat through. Check for seasoning and adjust with more salt and pepper if needed. Serve hot and enjoy.
Notes
Cut the onion from root to stem for best results.
