Kofta Soup with Potatoes

Ingredients

  • 250 grams kofta meat
  • 2 tablespoons corn oil
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 2 hot peppers, chopped
  • 2 tablespoons tomato paste
  • 1/4 cup vinegar
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon mixed spices
  • 1 large potato, cut into small cubes
  • 1/2 cup chopped green coriander or parsley
  • 2 cups water

Preparation

  1. Shape the kofta into very small balls.

  2. In a pot, heat the oil and add the kofta balls, stir for a few minutes until golden and firm.

  3. Add the onion, garlic, and hot pepper, stir with the kofta, add salt, paprika, and mixed spices as desired, continue sautéing and stirring the kofta balls to gain a delicious taste.

  4. Add the potatoes and tomato paste, then add about 2 cups of water, stir, then add half the amount of parsley.

  5. Cover the pot and leave the soup on the fire for about 10 minutes, sprinkle the remaining parsley and serve.
